How to
What you need - 1 egg - 2 tablespoons vegetable oil
How to make me : - Preheat oven to 180deg (fan forced) and lightly grease a 12 hole mini muffin pan
- In a large bowl, whisk together the egg, vegetable oil and apple puree. Whisk until smooth (some small lumps are ok!) Avoid over stirring as this will make the muffins tough
- Spoon muffin mixture into the pan, fill to the top. Bake for 20min. Cool for 5 min in baking pan before transferring to wire rack for complete cooling
How to Store
I'm best kept in an airtight container and eaten within 3 days (but I rarely last that long)
